Kaito Otokoyama Sake Brewery / Sake from Minamiaizu

Due to its location in a region of heavy snowfall, it was difficult for Minamiaizu to bring in master brewers (toji) from outside; consequently, the area has spent centuries developing a style of sake brewing suited to its local climate and food culture. In recognition of this unique approach, four breweries were designated under the "GI Minamiaizu" geographical indication in 2024. The pursuit of sake brewing that honors these artisanal traditions continues.
